2 lb stew beef/steak
2.5lb chicken breast
2 green bell pepper
1 yellow bell pepper
1 red bell pepper
4 red cherry peppers
3 Jalapeno peppers
2 Sarano peppers
2 Red Fresno peppers
4 medium yellow onions
1/2 cup pickled hot peppers
4 cloves garlic
4oz can green chilies diced
3oz tequila
1 juice of lime
8oz beer (Mexican style)
8oz chicken stock
¾ cup hot salsa
1 can corn
1/3 cup taco cheese
1 tsp liquid smoke
2 tsp Cayenne
4 tsp Oregano
4 tsp Cumin
2 tsp Coriander
1 tsp pepper
1 tsp salt
2 tbsp commercial fajita seasoning
Cut meat into Fajita-like bite size strips
Add oil to pan and brown meat. Do not crowd in pan and do not overcook.
Place meat in crock pot
Cook onion and garlic in pan used for meat
Add liquid ingredients and deglaze pan
Add dry spices mix and add to crock pot
Add all other ingredients to crock put
Cook on low for 4-6 hours
Store in refrigerator overnight and reheat the next day
